Spinach Protein Pancakes! Good morning! I woke up early in the morning craving pancakes. I made my favourite ones; spinach protein pancakes! They always give me good energy when I know I’ll need it! And don’t judge the pancakes by it’s colour 😉

2 tbsp coconut flour
3 tbsp oats
1 egg
1 eggwhite
1 big handful baby spinach
3 tbsp protein powder (I used coconut, vanilla)
1/4 tsp baking powder
1 half mashed banana
2 tbsp natural/greek yogurt
sweetener of choice
optional: 1 tsp cinnamon

You cant’t taste the spinach, it depends on your protein powder!
Mix everything with a handblender or a mixer. The batter will be very thick, if it’s too dry just add 1 tbsp milk. Fry in a pan with coconut oil of non stick spray on MEDIUM heat, protein pancakes needs patience! Enjoy! 🙂
