Healthy Coconut Pancakes

So for everyone who gets crazy when he/she sees my pancake pictures:
These were one of my first pancakes I made, and the very first ones which turned out really good 😀
Here’s the basic recipe:


3 Tbsp coconut flour
1 egg and 1 eggwhite (or three eggwhites)
1 Tbsp non-fat greek yogurt
1 tsp baking powder
1 tsp vanilla extract
sweeter of choice
Milk until it’s not too dry anymore

optional: 1 Tbsp coconut flakes or chia seeds

I topped it with greek yogurt, bananas and berries I heated in the microwave 🙂
