Cinnamon Blueberry ProteinPancakes

Hi! Today is a really beautiful day! The sun is shining and it’s soo hot, even though it’s october! Fall can be so pretty, I already went for a run and it was amazing outside! I’ve really missed this! Even when I’ve been working out the whole time during my injury, I’ve never worked out outside, but I really need this! Breathing fresh air through your body and being in the nature, after that I always feel better. 🙂

After that I wanted to make pancakes, but they kinda failed so here’s an old but really good recipe for you:

  • 40g oats
  • 2 tbsp coconut flour
  • 1 scoop (30g) Cookies and Cream Proteinpowder
  • 1/2 banana
  • 3 tbsp non-fat greek yogurt
  • 2 egg whites
  • 1/4 cup milk
  • 1/2 tsp backing powder
  • vanilla extract and sweetener to taste
  • 1-2 tbsp frozen blueberries

 

Mix everything (except the blueberries) with a handblender or mixer. The batter should be thick.. Stir in some blueberries and fry in a preheated pan on MEDIUM heat. Top with whatever you want. I made a cinnamon glace made out of 1 Tbsp honey and some cinnamon. Enjoy! 🙂
